Pancit Bihon Guisado (A Recipe from a First Time Cook)

About this Recipe: 
Pancit Bihon Guisado is a popular Filipino noodle dish that is brought about by chinese influence in our cuisine. This dish is made of "bihon" or rice sticks mixed with pork, chicken and vegetables that is commonly served in almost every gathering in the Philippines.

Last Saturday, my friend's been craving and bugging me to whip up something for lunch. Thinking that it was a cold Saturday morning and I'm feeling a little lazy, I decided to ignore her. Hah! But after a few discussion and squabbles, I gave in to her request and we decided to cook Pancit Bihon Guisado -- we then headed out to buy some of the ingredients, and here's what we got:

Oh! by the way, this is my first time to cook Pancit!

Cook Time: 30 to 40 minutes
Number of Serving: 6 to 8 servings

Ingredients:
  • 1/4 kg pancit bihon
   1/4 kg pork, cut into small cubes
   1/8 kg liver, cut into small cubes
   1/2 small cabbage, finely shredded
   1 small red bell pepper, cut into shreds
   1 medium sized carrot, cut into shreds
  • 1/2 cup baguio beans, cut into shreds
   1 small onion, diced
   1/2 tbsp. garlic, minced
   1 pc. pork bullion cube
  • 2 cups water
  • 6 tbsp. soy sauce
  • dash of salt, pepper to taste

Cooking Procedure:
Soak the noodles in warm water for 15 minutes or until soft and pliable.
Drain and set aside.

In a large pot, saute the garlic and onion on a medium heat
Add the chopped pork and liver and let cook for 2 minutes.
Put a dash of salt and pepper, adjust according to taste.


Add the pork bullion cube, soy sauce and water, then simmer for 15 minutes.
Put in the vegetables (cabbage, red bell pepper, baguio beans and carrots) and simmer for about 2 to 3 minutes.

Add the noodles and mix well.

First Timer's Tip #1: scratch the last line and do the following steps instead. This is to avoid over cooking the vegetables.. especially the carrots.

 Remove the meat and vegetables from the pan and set them aside.
Add the softened noodles to the liquid mixture and gently  toss to evenly coat.
Mix the meat and vegetables back in the pan and cook until the liquid evaporates completely.

First Timer's Tip #2: Do not over stir the noodles! 
Noodles is a symbol of prosperity and long life, so avoid cutting them short.


Serve hot and enjoy. Best served with a sliced calamansi.
